Learn how sake is classified so that you can pick the right sake

There are four types of sake smoky maturity. Some people are scared to death, but if we separate the four types, it won't be so bad!

Sake that has been "smoked"

Light in flavor yet with a strong and refreshing floral and fruit aroma, smoked sake is the perfect companion for a range of dishes. Its delicate flower and fruit notes linger on the palate, without overpowering the freshness of appetizers like sashimi and salads, as well as white fish dishes including steamed fish and scallops. To fully appreciate its balanced aroma and flavor, smoked sake is best served between 10-15 degrees Celsius. Going below this temperature can weaken its character. Sake with a "sharp" taste

Of the various Japanese wines available, the original and fermented ones are especially invigorating. These cool wines boast refreshing qualities and subtle fruity notes, providing a lighter and more enjoyable drinking experience compared to smoked wines. They pair well with delicate dishes like summer-sugared tomatoes, cold noodles, and boiled soybeans and tofu. Generally served at a temperature of 5-10 °C, the lower degree highlights their crispness and youthful flavor, making them pleasingly smooth on the palate for all ages.

Sake with a "mellow" color

Mellow wines, like pure rice wine and raw glutinous rice, have a rich and full-bodied taste with a rounded and firm texture. They also have hints of lactic acid and herbal flavors. On the other hand, alcoholic wines strive for a balance of various flavors, such as sour and sweet or bitter and fresh. These types of wines pair well with main dishes like fried steak and grilled fish, as well as greasy snacks like braised, skewered, or fried food. By neutralizing the greasiness, these two flavors complement each other perfectly. Wine that has been "cooked"

A cooked liquor is a long-term matured liquor brewed by families for at least three to five years by ancient or corporate families. Besides having a rich rice aroma, cooked wines also have a thick, smooth texture with a long finish, and have more complex and varied flavors. To maximize the flavor of matured sake, serve it with richly flavored dishes like mapo tofu, grilled eel, and braised pork. The temperature of matured sake is usually 20°C.

The subtleties and nuances of sake flavor cannot be fully explained by the four main categories of smoky, refreshing, mellow, and ripe. Rather, they must be accumulated through usual tastings.
